Each of our cabins at Elkins Resort on Priest Lake has a Briquette BBQ and fully-equipped kitchen as well as community gas BBQs on the property, so making your own homemade meals is super easy on your summer vacation. Though you’re of course always welcome to dine at our restaurant or grab a pizza to take back to your cabin! We’ve compiled a list of some of our favorite and easy BBQ recipes and side dishes you should try this year.

Grilled chicken with nectarine, red onion, and basil relish

Pair the sweet fruit of summer with a simple staple like grilled chicken for a fresh take on your main course. You can always swap peaches for nectarines too.

Grilled steak and vegetable kabobs

Kabobs are great for grilling and you really can’t go wrong when you go with steak as your main entrée! You could always use peppers and onions for your vegetables too if you want to add some color to your plate.

The barbecue flavor of this dish is increased exponentially as the burgers are basted with sauce while they’re on the grill! Top with slices of cheese, onion, and bacon for a mouthwatering burger.

Looking for something light or to work around vegetarian dietary restrictions? This dish will satisfy both needs and can be paired with a salad for a full meal.

Take your potato salad to the next level with an amazing bacon vinaigrette! The potatoes are cooked twice so this does require some extra cook time, but it’s so worth it with the delightful mix of summer flavors and a comfort food classic.

Make your presentation pop with this colorful pasta salad! This super easy recipe only takes about 15 minutes to make and is packed with flavor from the spinach, strawberries, almonds, feta, and of course the balsamic glaze.

Loaded BBQ fries

Depending on how hungry you are, you might be able to turn this dish into a meal of its own! This dish has French fries, pulled pork, Colby Jack cheese, tomato, onion, and barbecue sauce. Just don’t forget enough forks for everyone to dig in! Another option if you want to go with fries on the side is to try the campfire garlic French fries where it’s prepared right on the grill in aluminum foil packets.

A new spin on the classic chips and dip combo that utilizes fresh summer corn! Just bring bacon, cream cheese, cheddar, sour cream, chives, and salt for the dip and your favorite chip for a great afternoon of summer snacking.
